Foodie Tuesday – Sweet Summer Spinach Salad


It’s summertime and that means grocery stores and gardens are full of fresh veggies.  One of our favorites here at Go Folic is spinach.  Spinach is a nutritional powerhouse – full of Vitamins A, C, E, K.  One cup of spinach contains about 15% of your daily value of folates (the naturally-occurring form of folic acid).  Spinach is also full of iron, calcium, and other important minerals your body craves.  Eating spinach regularly can help prevent osteoporosis, iron deficiency anemia, and help pregnant women get the important nutrition their babies need.

Not only that, but spinach is also a tasty green in a summer salad.  Here’s a great recipe featuring another summer favorite – strawberries!  You can use your favorite dressing with this salad, or create your own with the instructions below.  Happy eating!

Sweet Summer Spinach Salad

Yields 6 servings

Prep time: 15 minutes

Cook time:  0 minutes!

Ingredients:

  • 1/4 red onion, thinly sliced
  • 2 (6 oz.) bags baby spinach
  • 1 (16 0z.) container strawberries, quartered
  • 1/2 cup sliced toasted almonds or walnuts
  • salt & pepper
  • (optional) crumbled cheese, such as feta or blue cheese

Preparation:

  1. Toss ingredients together in a large salad bowl
  2. Drizzle with dressing, sprinkle with salt & pepper to taste
  3. Enjoy!

Sesame Poppy Seed Dressing

Yields about 2 1/2 cups

Prep time:  20 minutes

Cook time: 0 minutes!

Ingredients:

  • 1/2 cup cider vinegar
  • 1 cup sugar
  • 1 tablespoon minced onion
  • 1/2 teaspoon Worcester sauce
  • 1/4 teaspoon salt
  • 1 cup olive oil
  • 1/4 cup sesame seeds
  • 2 tablespoons poppy seeds

Preparation:

  1. Pulse vinegar, sugar, onion, Worcester sauce, and salt in a blender 2-3 times or until smooth
  2. Add oil in a slow, steady stream
  3. Process mixture until smooth
  4. Stir in seeds
