While on vacation, we were inspired by all of the beautiful summer produce to experiment. We call this dish Ratatouille Pizza because it was inspired by the French dish of the same name. According to Wikipedia, the dish originated in Nice. Traditionally, it involves sauteéing the following ingredients together: tomatoes, garlic, onions, zuchhini, eggplant, bell peppers and herbs.
In keeping with the our inspirational dish, we started with these ingredients:
And then sprinkled them over two frozen pizza crusts (we love the crunch of cornmeal and the deep dish nature of this crust was able to handle all of our ingredients, plus, the crusts came two to a package):
And then baked it in a 375° oven for 20 minutes. Our appreciative diners raved! Here is the finished product:
We served this with our Green Bean and Asian Pear salad and got rave reviews. Even with 4 of us, we had a couple of slices left over for breakfast.
