Happy National Eat Your Veggies Day!

Today is National Eat Your Veggies Day! In preparation for this food holiday. I spent a day trying to eat a fruit or vegetable from every color of the rainbow. Here are the results:

Breakfast: Blackberries and pineapple yogurt (not pictured)


Color tally: yellow, purple

Lunch: Beef massaman curry with potatoes and okra (Recipe can be found here)


Color tally: yellow, green, purple

Dinner: Tofu and vegetable stir fry with peanut sauce (Peanut sauce recipe can be found here)


Color tally: red, orange, yellow, green, purple

Dessert: Rainier cherries (whoops, forgot to take a photo before I started eating!)

I missed blue. Lessons learned – I should try to eat more fruits and vegetables. And I should try to add variety of colors into my food routine. Who else is going to try this colorful challenge?

  1. I am taking the challenge! So far, spinach (green), tomatoes (red), marble potatoes (purple), corn (yellow) for breakfast. Spinach & avocado (green), beets & strawberries (red), blueberries (purple), bananas (yellow/white). For lunch, marinara sauce (red) + bison, lettuces (green + red), radish + onion (white), sugar snap peas (green). For dinner, similar salad. Oops! I think that I need some orange (carrots or yams, perhaps?)
