Love Your Lentils


   Looking for a healthy food item that is nutritious, easy to make and cheap? If you thought this was the impossible combination, think again, because there is a food item that satisfies these three requirements: the lentil.

   Lentils are members of the legume family, and like their fellow beans, they grow in pods. A staple item of the Indian cuisine, lentils are a fantastic source of fiber, iron and vitamin B. And of course, lentils are a great source of folate, with a whopping 358 mcg of folate in each serving.

   Yes, you could simply go to any Indian restaurant to get your fill of lentils, in its cooked form known as dal, but they would be even more beneficial if integrated into homemade meals. Lentils can be cooked immediately, without soaking beforehand, and are delicious by themselves or with spices. Image
